Ingredients
2 tbsp Bowl & Basket unsalted butter
1⁄2 cup each chopped onion
1⁄2 cup each chopped celery
1⁄2 cup each chopped carrots
1 tbsp minced garlic
4 cups leftover turkey, shredded or roughly chopped
1 cup Bowl & Basket frozen peas and carrots
1 tsp Bowl & Basket chicken bouillon (1 cube)
1⁄2 tsp freshly ground black pepper
2 cups leftover gravy
4 cups leftover mashed potatoes
Directions

1.Preheat the oven to 375 degrees and heat a large oven safe skillet over medium-high heat. Add butter, onions, celery and carrots and cook until softened, about 5-8 minutes. Add in the garlic and cook for an additional 30 seconds.

 

2. Stir in frozen peas and carrots, leftover turkey, chicken bouillon, black pepper and gravy and stir until well combined and heated through. Remove from heat.

 

3. Top casserole with leftover mashed potatoes, spreading out evenly over the top. Use a fork to make ridges on the top of the mashed potatoes, then carefully place the skillet in the preheated oven and cook at 375 degrees until bubbly and mashed potatoes have browned a bit on top, approximately 25 minutes. If desired, turn the oven to broiler for the last 2-3 minutes.
